Restix Demo
Chef-driven cuisine with produce from the Uruguayan coast
Our story
Restix Demo opened in 2009 as a twelve-seat counter facing the Pocitos rambla. After a decade in kitchens in San Sebastián and Lima, Martín Aguerre came back to Montevideo with a simple idea: cook whatever the port market and the Canelones farms bring in each morning, with no artifice beyond perfect timing.
Today the dining room has grown, the terrace looks out to the sea and the team is twenty strong, but the routine is the same: the catch comes through the back door before noon, the bread is kneaded in-house and the menu changes when the season does — not before.

The team
Twenty people across dining room, fire and kitchen. These are the three teams that make everything arrive on time.

Dining room team
Hosts and sommeliers who know the menu by heart — and the regulars by name.

Grill & hot kitchen
The espinillo-wood fire is the heart of the house: whole fish, vegetables and dry-aged cuts.

Cold kitchen & pastry
Starters, sourdough breads and the desserts that close the experience.

The spaces
A bright main dining room overlooking the rambla, a counter facing the open kitchen to eat watching the pass, a private room for twelve and the outdoor terrace, covered and heated in winter.
